The Zabaione Romano Flavouring Paste (Art. No. 873147) produced by Expertarom Food Ingredients S.R.L., Sibiu, Romania, is a flavouring ingredient developed for use in the food industry, particularly in ice cream applications. It provides the characteristic taste, colour, and richness associated with the traditional zabaione flavour profile and is intended for food manufacturing rather than direct consumption. The recommended dosage is approximately 50 g per 1 kg of mix.
The paste is formulated from sugar, water, glucose syrup, and egg powder, combined with flavourings, modified starch, and lactic acid as an acidifier. Annatto and carotenes are used as colouring agents, while sodium citrate acts as an acidity regulator, potassium sorbate as a preservative, and ascorbic acid as an antioxidant. The product contains less than 1.2% alcohol by volume. At 20°C, it appears as a viscous orange paste with a typical zabaione aroma and taste.
Physico-chemical characteristics include a Brix value of approximately 64.5°Bx (±3) and a pH of 4.0 (±0.5). Nutritionally, the product provides 1094.5 kJ / 258 kcal per 100 g, with 2.0 g of fat (0.66 g saturated), 53.9 g of carbohydrates, 2.3 g of protein, 0 g of fibre, and 0.310 g of salt.
The product complies with microbiological limits of max. 1000 cfu/g total germ count, 1 cfu/g Enterobacteria, and 100 cfu/g yeasts and moulds, and meets the requirements of EU Regulation (EC) No. 2023/915 regarding contaminants.
It is supplied in food-grade polypropylene sealed buckets and should be stored in its original unopened packaging in a cool, dry place away from direct sunlight at 5–25°C. After opening, it should be kept refrigerated at 0–8°C with the container properly closed after each use. Under these recommended conditions, the product has a shelf life of 24 months from the production date and should be transported in accordance with standard food safety practices.
