The Variegato Mandarinetto (Art. No. 875058) produced by Expertarom Food Ingredients S.R.L., Sibiu, Romania, is a fruit preparation designed for the food industry, particularly for filling and decorating ice cream, confectionery, pastry products, and other desserts. The product provides a bright citrus flavour and colour and can be used according to taste and the requirements of the final recipe.
The preparation is made from sugar, glucose syrup, orange juice from concentrate, and water, with a minimum fruit content of 17%. It also contains citric acid, pectin and carrageenan as stabilisers, safflower extract and carminic acid for colouring, ascorbic acid as an antioxidant, potassium sorbate as a preservative, and flavourings. At 20°C, the product appears as a viscous orange mass with a typical citrus aroma and taste.
Physico-chemical parameters include a Brix value of approximately 69°Bx (±3) and a pH of 2.9 (±0.5). Nutritionally, the product provides 1165.4 kJ / 274.2 kcal per 100 g, with less than 0.1 g of fat, 67.4 g of carbohydrates (60.3 g sugars), 0.43 g of fibre, 0.1 g of protein, and 0.105 g of salt.
The product complies with microbiological standards of max. 1000 cfu/g total germ count, 10 cfu/g Enterobacteria, and 100 cfu/g yeasts and moulds, and meets the requirements of EU Regulation (EC) No. 915/2023 regarding contaminants.
Variegato Mandarinetto is supplied in food-grade polypropylene sealed buckets. It should be stored in its original unopened packaging in a cool, dry place away from direct sunlight at 5–25°C, and once opened kept refrigerated at 0–8°C with the container closed after each use. Under recommended storage conditions, the product has a shelf life of 24 months from the production date.
