Raspberry Topping (Art. No. 870922) manufactured by Expertarom Food Ingredients S.R.L., Sibiu, Romania, is a dessert sauce developed for professional use in the food industry. It is ideal for decorating and flavouring ice cream, cakes, desserts, fruit salads, cocktails, and coffee beverages.
The topping can also be used creatively in dessert preparation. When mixed with frozen fruits, it forms a fruit sauce suitable for dessert decoration, and when blended with approximately 30% neutral gel, it can be transformed into a fruit jelly containing pieces of fruit.
The formulation includes glucose-fructose syrup, water, sugar, raspberry juice (5%), modified starch, citric acid, pectin as stabiliser, vegetable colour concentrates from black carrot, sodium citrate as acidity regulator, potassium sorbate as preservative, and flavourings. The product contains a minimum fruit content of 5%.
At 20°C, the topping has the appearance of a homogeneous viscous mass with a red-violet colour, a typical raspberry aroma, and a sweet fruity taste. Its Brix value is approximately 61°Bx (±3) and pH is around 3.2 (±0.5).

The topping is supplied in food-grade PP sealed buckets of 14 kg. It should be stored in its original unopened packaging at 0–8°C, in a cool and dry place away from direct sunlight. After opening, the packaging should be closed properly after each use, and the product should be homogenised before use if separation occurs.
Under recommended storage conditions, Raspberry Topping has a shelf life of 18 months from the production date and should be transported according to standard food safety requirements.
