The product is made from glucose syrup, water, sugar, instant coffee (7%), sulphite ammonia caramel as a colouring agent, modified starch, flavouring, potassium sorbate as a preservative, and tartaric acid as an acidity regulator. It has a Brix value of 67.0°Bx ± 3 and a pH of 3.9 ± 0.5, providing good flavour stability and microbiological safety. Mocca Paste is supplied in food-grade PP sealed buckets. It should be stored in its original unopened packaging in a cool, dry place, away from direct sunlight, at temperatures between 5 and 25°C. After opening, the product should be kept refrigerated, the packaging closed after each use, and homogenisation before use is recommended. When stored under the recommended conditions and in the original packaging, the shelf life is 24 months from the production date.
The product complies with current EU legislation regarding contaminants, food contact materials, GMO regulations, and allergen labelling requirements.
