DairyLux D2421 is a spray-crystallised, fully integrated emulsifier and stabiliser system specifically developed for low total solids and economy ice cream formulations. Cold-water dispersible and non-palm based, it delivers reliable structure, stability, and mouthfeel in cost-efficient formulations, while offering a sustainable alternative to palm-derived systems. DairyLux D2421 is a direct non-palm replacement for DairyLux 409.
The system can be added at any stage of pasteurisation and becomes fully soluble at temperatures above 66 °C, providing flexibility across a wide range of processing conditions. Its balanced blend of mono- and diglycerides of fatty acids (E471) with locust bean gum, guar gum, and carrageenan helps to improve body, control viscosity, and maintain stable texture and melt performance in low-solids ice cream applications.
Manufactured in the United Kingdom using ingredients sourced from more than one country, DairyLux D2421 complies with current UK and EU food legislation and stringent food safety standards. The product is suitable for vegetarians, vegans, coeliacs, lactose-intolerant consumers, and nut allergy sufferers, and is certified Halal and Kosher (Pareve, non-Passover). It is non-GMO, non-irradiated, and contains no nanomaterials.
DairyLux D2421 is supplied in 25 kg food-grade packaging. When stored in unopened, undamaged packaging in a cool, dry environment below 25 °C, it has a shelf life of 24 months from the date of manufacture.
