25kg DairyLux D2416 (Non palm Dairylux 442)
DairyLux D2416 is a high-performance, spray-crystallised emulsifier and stabiliser system designed for ice cream and frozen dessert applications. Fully integrated and cold-water dispersible, it delivers excellent texture, stability, and consistency across a wide range of formulations.
This non-palm based system is derived from sunflower or rapeseed oil, offering a sustainable alternative to palm-based emulsifiers and a direct non-palm replacement for DairyLux 442. DairyLux D2416 can be added at any stage of pasteurisation and is fully soluble at temperatures above 66 °C, making it flexible and easy to use in industrial processes.
The formulation combines mono- and diglycerides of fatty acids (E471) with carefully balanced hydrocolloids including guar gum, carrageenan, and locust bean gum to optimise viscosity, emulsion stability, and mouthfeel. Recommended usage levels vary depending on fat content and process conditions, ensuring adaptability across different ice cream styles.
Manufactured in the United Kingdom using ingredients sourced from more than one country, DairyLux D2416 meets stringent UK and EU food safety and quality standards. It is suitable for vegetarians, vegans, coeliacs, lactose-intolerant consumers, and nut allergy sufferers, and is certified Halal and Kosher (Pareve, non-Passover). The product is non-GMO, non-irradiated, and contains no nanomaterials.
Supplied in 25 kg food-grade packaging, DairyLux D2416 should be stored in a cool, dry place below 25 °C and has a shelf life of 24 months from production under recommended storage conditions.
