The Cremogel (Art. No. 854061) produced by Expertarom Food Ingredients S.R.L., Sibiu, Romania, is an emulsifier used in the food industry for ice cream production and pastry applications, particularly tender dough products. It is designed to improve texture, stability, and emulsification in food formulations and is intended for manufacturing use rather than direct consumption. The recommended dosage is 7–10 g per kg for ice cream and 15–35 g per kg for pastry dough.
The product is formulated from water and emulsifiers such as mono- and diglycerides of fatty acids and polyglycerol esters of fatty acids. It also contains propylene glycol as a humectant, stearic acid as a thickener, sodium hydroxide as an acidity regulator, natural flavouring, and iodised salt. At 20°C, it appears as a homogeneous white fat-based mass with a typical smell and taste.
Nutritionally, the product provides 1263.3 kJ / 302.2 kcal per 100 g, with 26.8 g of fat, and no carbohydrates, sugars, fibre, or protein, and 0.175 g of salt.
Cremogel is supplied in polypropylene (PP) buckets and should be stored in its original unopened packaging in a cool, dry place protected from direct sunlight at temperatures between 5°C and 25°C with a maximum relative humidity of 75%. Under these conditions, the product has a shelf life of 12 months from the production date and should be transported according to standard food safety practices.
