The Mix Dessert “La Nonna” (Art. No. 854212) produced by Expertarom Food Ingredients S.R.L., Sibiu, Romania, is a powdered base used in the food industry for the preparation of ice cream and dessert products. It is designed to provide flavour, structure, and stability in a variety of dessert applications and is intended for manufacturing use rather than direct consumption.
The mix can be used in several dessert preparations depending on the recipe. Typical usage includes 1.2 kg of mix with 3 litres of milk for ice cream, 1.2 kg of mix with 3.2 litres of milk for granita, or 150 g of mix with 350 g of whipping cream for coppa-style desserts.
The formulation contains sugar, skimmed milk powder, dextrose, milk protein, palm vegetable fat, glucose syrup, and modified starch. It also includes emulsifiers (acetic acid esters of mono- and diglycerides of fatty acids, mono- and diglycerides of fatty acids, and propane-1,2-diol esters of fatty acids) and stabilisers (sodium alginate, guar gum, and sodium carboxymethylcellulose). Additional ingredients include maltodextrin, flavourings, iodised salt, colours (beta-carotene and curcumin), and ascorbic acid as an antioxidant. At 20°C, the product appears as a yellow powder with sugar crystals, with a typical aroma and taste. The powder has a density of approximately 1.10 g/cm³ (±0.02).
Nutritionally, the product provides 1905 kJ / 451.9 kcal per 100 g, with 12.4 g of fat (8.6 g saturated), 75.2 g of carbohydrates (66.0 g sugars), 0.4 g of fibre, 9.5 g of protein, and 0.65 g of salt.
The product complies with microbiological limits of max. 1000 cfu/g for yeasts and moulds and 100 cfu/g for Enterobacteria, and meets the requirements of EU Regulation (EC) No. 915/2023 regarding contaminants.
