The Cremo Soft Mix Fior di Latte (Art. No. 854214) produced by Expertarom Food Ingredients S.R.L., Sibiu, Romania, is a powdered base designed for the production of milk-flavoured ice cream, suitable for use in soft ice cream or gelato equipment. It is intended for food manufacturing rather than direct consumption. The recommended preparation ratio is 2 kg of mix combined with 4 litres of water or milk (3.5% fat).
The formulation includes sugar, skimmed milk powder, coconut vegetable fat, dextrose, and whole milk powder, together with emulsifiers (acid esters of mono- and diglycerides of fatty acids, mono- and diglycerides of fatty acids, and sucrose esters of fatty acids) and stabilisers (guar gum and carboxymethyl cellulose). Natural milk flavour and additional flavourings provide the characteristic Fior di Latte taste. At 20°C, the product appears as a white to yellowish powder with sugar crystals, with a typical dairy aroma and flavour. The powder has a density of approximately 1.10 g/cm³ (±0.02).
Nutritionally, the product provides 1930 kJ / 458.8 kcal per 100 g, with 15.3 g of fat (13.3 g saturated), 69.7 g of carbohydrates (67.9 g sugars), 1.1 g of fibre, 9.97 g of protein, and 0.35 g of salt.
The product complies with microbiological limits of max. 1000 cfu/g for yeasts and moulds and 100 cfu/g for Enterobacteria, and meets the requirements of EU Regulation (EC) No. 915/2023 regarding contaminants.
Cremo Soft Mix Fior di Latte is supplied in 2 kg bags (8 bags per 16 kg carton box), with 800 kg per pallet. It should be stored in its original unopened packaging in a cool, dry place protected from direct sunlight at temperatures between 5°C and 25°C with relative humidity up to 75%. Under these conditions, the product has a shelf life of 18 months from the production date and should be transported according to standard food safety practices.
