607-25 DairyLux 425 is a spray-crystallised, fully integrated emulsifier and stabiliser system developed for use in all types of ice cream applications. Cold-water dispersible and easy to incorporate, it provides reliable emulsification, viscosity control, and texture development across a wide range of fat levels.

The balanced combination of mono- and diglycerides of fatty acids with guar gum, locust bean gum, sodium alginate, and carrageenan delivers excellent body, smooth mouthfeel, and controlled meltdown. This formulation supports stable air incorporation and effective ice crystal management, contributing to consistent product quality throughout processing, storage, and distribution.

DairyLux 425 can be added at any stage of pasteurisation and becomes fully soluble at temperatures above 66 °C, offering flexibility for different manufacturing processes. Usage levels can be adjusted according to fat content, formulation, and desired sensory profile.

Manufactured in the United Kingdom using ingredients sourced from more than one country, 607-25 DairyLux 425 complies with all relevant UK and EU food legislation. The product is non-GMO, non-irradiated, and contains no nanomaterials. It is suitable for vegetarians, vegans, coeliacs, lactose-intolerant consumers, and nut allergy sufferers, and is certified Halal and Kosher (Pareve, non-Passover).

607-25 DairyLux 425 is supplied in 25 kg food-grade packaging. When stored in unopened, undamaged packaging in a cool, dry environment below 25 °C, it has a shelf life of 24 months from the date of manufacture.
