607-22 DairyLux 422 is a spray-crystallised, fully integrated emulsifier and stabiliser system developed specifically for intermediate fat ice cream, soft serve, and ice cream dessert applications. Cold-water dispersible and easy to process, it provides enhanced structure, stability, and texture control where a stronger functional system is required.
The formulation combines mono- and diglycerides of fatty acids with a carefully balanced blend of cellulose gum, guar gum, locust bean gum, sodium alginate, and carrageenan. This delivers effective emulsification, viscosity build, and water binding, supporting smooth mouthfeel, controlled meltdown, and stable air incorporation throughout processing and frozen storage.
DairyLux 422 can be added at any stage of pasteurisation and becomes fully soluble at temperatures above 66 °C, offering flexibility across a range of manufacturing conditions. It is particularly well suited to soft serve and dessert-style products where body, stand-up, and heat shock resistance are critical to finished product performance.
Manufactured in the United Kingdom using ingredients sourced from more than one country, 607-22 DairyLux 422 complies with all relevant UK and EU food legislation. The product is non-GMO, non-irradiated, and contains no nanomaterials. It is suitable for vegetarians, vegans, coeliacs, lactose-intolerant consumers, and nut allergy sufferers, and is certified Halal and Kosher (Pareve, non-Passover).
607-22 DairyLux 422 is supplied in 25 kg food-grade packaging. When stored in unopened, undamaged packaging in a cool, dry environment below 25 °C, it has a shelf life of 24 months from the date of manufacture.
