607-20 DairyLux 420 is a spray-crystallised, fully integrated, cold-water-dispersible emulsifier and stabiliser system developed for use across all types of ice cream applications. It delivers balanced emulsification and stabilisation to support consistent texture, smooth mouthfeel, and reliable performance across a wide range of fat levels.
The system can be added at any stage of pasteurisation and is fully soluble at temperatures above 66 °C, offering flexibility for different processing conditions. Its carefully selected blend of mono- and diglycerides with locust bean gum, guar gum, sodium alginate, and carrageenan helps control ice crystal growth, improve body, and maintain good meltdown and scoopability throughout shelf life.
Manufactured in the United Kingdom using ingredients sourced from more than one country, 607-20 DairyLux 420 is produced in accordance with current UK and EU food legislation and stringent food safety standards. The product is suitable for vegetarians, vegans, coeliacs, lactose-intolerant consumers, and nut allergy sufferers, and is certified Halal and Kosher (Pareve, non-Passover). It is non-GMO, non-irradiated, and does not contain or utilise nanotechnology.
607-20 DairyLux 420 is supplied in 25 kg food-grade packaging and has a shelf life of 24 months when stored in unopened, undamaged packaging in a cool, dry environment below 25 °C.
