The Matcha Green Tea Paste (Art. No. 873402) produced by Expertarom Food Ingredients S.R.L., Sibiu, Romania, is a flavouring paste designed for use in the food industry, particularly in ice cream production. It provides a characteristic matcha flavour and colour to finished products and is intended for food manufacturing rather than direct consumption. The recommended dosage is approximately 50 g per 1 kg of mix.
The paste is made from sugar, glucose syrup, water, modified starch, and matcha tea powder, combined with flavourings, citric acid, pectin as a stabiliser, and potassium sorbate as a preservative. Colour is provided by sulphite ammonia caramel, curcumin, and copper chlorophyllin, giving the product its distinctive green appearance. At 20°C, it appears as a viscous green mass with a typical matcha aroma and taste.
Physico-chemical characteristics include a Brix value of approximately 70°Bx (±3) and a pH of 3.3 (±0.5). Nutritionally, the product provides 1124.9 kJ / 264.8 kcal per 100 g, with 0.4 g of fat (of which 0.4 g are saturated), 64.9 g of carbohydrates (54.7 g sugars), 0.36 g of fibre, less than 0.1 g of protein, and 0.15 g of salt.
The product complies with microbiological limits of max. 1000 cfu/g total germ count, 1 cfu/g Enterobacteria, and 100 cfu/g yeasts and moulds, and meets the requirements of EU Regulation (EC) No. 2023/915 regarding contaminants.
It is supplied in food-grade polypropylene sealed buckets and should be stored in its original unopened packaging in a cool, dry place away from direct sunlight at 5–25°C. After opening, the product should be kept refrigerated at 0–8°C with the container properly closed after each use. Under these recommended conditions, the paste has a shelf life of 24 months.
