The Cremo Soft Mix Chocolate (Art. No. 854221) produced by Expertarom Food Ingredients S.R.L., Sibiu, Romania, is a powdered base designed for the production of chocolate ice cream, suitable for both hot and cold preparation methods. The product is intended for food manufacturing rather than direct consumption. For preparation, the recommended dosage is 2 kg of Soft Mix Chocolate combined with 4 litres of water or milk (3.5% fat).
The mix contains 62% chocolate powder (sugar and cocoa) together with dextrose, coconut vegetable fat, skimmed milk powder, and whole milk powder. It also includes emulsifiers (acetic acid esters of mono- and diglycerides of fatty acids, mono- and diglycerides of fatty acids, and sucrose esters of fatty acids), stabilisers (guar gum and sodium carboxymethylcellulose), and flavourings including quinine flavour. The product appears as a homogeneous brown powder with a typical chocolate aroma and taste.
Nutritionally, the product provides 1804.2 kJ / 429 kcal per 100 g, with 12.8 g of fat (10.0 g saturated), 67.0 g of carbohydrates (65.4 g sugars), 6.4 g of fibre, 8.0 g of protein, and 0.675 g of salt.
The product complies with microbiological limits of max. 100 cfu/g for yeasts and moulds and 10 cfu/g for Enterobacteria, and meets the requirements of EU Regulation (EC) No. 2023/915 regarding contaminants.
Cremo Soft Mix Chocolate is supplied in aluminium bags designed to ensure product stability during storage. It should be stored in clean warehouses away from direct sunlight, heat, and freezing sources at temperatures between 5°C and 25°C with relative humidity up to 75%, in its original sealed packaging. Under these conditions, the product has a shelf life of 18 months from the production date and should be transported in clean, covered vehicles to prevent contamination or deterioration.
