The Caramel Variegato (Art. No. 875702) produced by Expertarom Food Ingredients S.R.L., Sibiu, Romania, is a caramel-based cream designed for use in the food industry as a filling or decorative swirl for ice cream, pastry products, and other desserts. The dosage depends on the specific recipe and desired intensity of flavour and texture in the final product.
The product is made from sugar, glucose syrup, palm vegetable oil, water, cream (35% fat), and whole milk powder, combined with caramelised sugar (0.9%) to provide its characteristic flavour and colour. Additional ingredients include an emulsifier (acetic acid esters of mono- and diglycerides of fatty acids), salt, potassium sorbate as a preservative, and flavourings. At 20°C, it appears as a fluid, homogeneous brown paste with a typical caramel aroma and taste.
Physico-chemical parameters include a Brix value of approximately 75°Bx (±3) and a pH of 6.1 (±0.5). Nutritionally, the product provides 1741.9 kJ / 416 kcal per 100 g, with 20.8 g of fat (11.3 g saturated, 0.08 g trans fats), 54.8 g of carbohydrates (49.2 g sugars), 2.3 g of protein, 0 g of fibre, and 0.425 g of salt.
The product meets microbiological standards with limits of max. 1000 cfu/g total plate count, 10 cfu/g Enterobacteria, and 100 cfu/g yeasts and moulds.
Caramel Variegato is supplied in polypropylene (PP) buckets. It should be stored in its original unopened packaging in a cool, dry place away from direct sunlight at temperatures between 5°C and 25°C. Once opened, the product should be kept properly closed and consumed within 7 days. Under recommended storage conditions, the product has a shelf life of 12 months and should be transported in clean, covered vehicles to prevent contamination or degradation.
