607-101 DairyLux Mousse Stabiliser is a combined emulsifier and gelatine-based stabiliser system developed for frozen dessert applications that require structure and stability at room temperature. It is particularly suited to mousse-style and aerated frozen desserts where firm gel formation and shape retention are essential. Sugar is included in the formulation to standardise the emulsifier blend and ensure consistent performance.

The system is designed to be dry mixed with sugar and added to the formulation with stirring prior to pasteurisation, allowing for effective hydration and dispersion. Its carefully balanced combination of gelatine, mono- and diglycerides of fatty acids (E471), locust bean gum, and guar gum delivers strong gel strength, smooth texture, controlled aeration, and excellent stability during handling and serving.

Manufactured in the United Kingdom using ingredients sourced from more than one country, 607-101 DairyLux Mousse Stabiliser complies with current UK and EU food legislation and is produced to high food safety and quality standards. The product is non-GMO, non-irradiated, and contains no nanomaterials. Due to its gelatine content, it is not suitable for vegetarians or vegans and is not Halal or Kosher certified, but it is suitable for coeliacs and lactose-intolerant consumers.

607-101 DairyLux Mousse Stabiliser is supplied in 25 kg food-grade packaging. When stored in unopened, undamaged packaging in a cool, dry environment below 25 °C, it has a shelf life of 24 months from the date of manufacture.
