TOPPING DESSERT “LA NONNA” (Art. No. 871605) produced by Expertarom Food Ingredients S.R.L., Sibiu, Romania, is a dessert sauce designed for use in the food industry. It is primarily used for decorating and flavouring ice cream, desserts, cakes, fruit salads, cocktails, and coffee-based drinks. The quantity used depends on the desired taste and application.

The topping is made from glucose syrup, sugar, water, low-fat cocoa, and cake crumbs. The cake crumbs contain wheat flour, sugar, egg, native corn starch, glucose syrup, skimmed milk powder, raising agents (sodium bicarbonate and sodium acid pyrophosphate), iodised salt, and flavouring. Additional ingredients include coffee extract, modified starch, egg yolk, iodised salt, tartaric acid as an acidifier, potassium sorbate as a preservative, and flavourings.

At 20°C, the product has the appearance of a viscous mass with a black-brown colour and a typical taste and aroma. Its pH is approximately 5.7 ± 0.5, and it has a Brix value of about 69° ± 3, indicating a high sugar concentration typical for dessert toppings.

The nutritional values per 100 g are:

  • Energy: 1131.2 kJ / 267 kcal

  • Fat: 2.5 g (of which saturated fatty acids 1.1 g; trans fatty acids <0.1 g)

  • Carbohydrates: 58.1 g (of which sugars 47.6 g)

  • Fibre: 1.4 g

  • Salt: 0.27 g

Microbiological limits include maximum 1000 cfu/g total germ count, 1 cfu/g Enterobacteria, and 100 cfu/g yeasts and moulds, and the product complies with EU Regulation (EC) No. 915/2023 regarding contaminants.

The topping is packed in food-grade PP sealed bottles. It should be stored in its original unopened packaging in a cool, dry place away from direct sunlight at temperatures between 5°C and 25°C. After opening, it should be kept refrigerated at 0–8°C. Under recommended storage conditions, the shelf life is 12 months from the production date. Transport should be carried out in clean, covered vehicles to prevent contamination, pollution, or product degradation.
