The Patesa Forest Fruit (Art. No. 860518) produced by Expertarom Food Ingredients S.R.L., Sibiu, Romania, is a fruit filling designed for pastry and confectionery applications. It is bake-stable and thaw-stable, making it suitable for use in baked goods, desserts, and other pastry products. The dosage depends on the specific recipe and desired fruit content in the final product.
The filling contains 45% fruit, including black currants, raspberries, strawberries, blackberries, and blueberries, combined with fructose syrup and sugar to create a balanced sweetness. The formulation also includes modified starch and stabilisers (cellulose and carboxymethyl cellulose) for texture, citric acid for acidity, hibiscus and carrot concentrates for colouring, potassium sorbate as a preservative, and flavourings. At 20°C, the product appears as a viscous red-violet mass with visible fruit pieces, with a typical forest fruit aroma and taste.
Physico-chemical parameters include a Brix value of approximately 40°Bx (±3), pH of 3.0 (±0.5), and moisture content of around 52%. Nutritionally, the product provides 745 kJ / 175.5 kcal per 100 g, with 0.1 g of fat, 42.1 g of carbohydrates (34.8 g sugars), 1.6 g of fibre, 0.3 g of protein, and 0.125 g of salt.
The product complies with microbiological limits of max. 1000 cfu/g total germ count, 10 cfu/g Enterobacteria, and 100 cfu/g yeasts and moulds, and meets the requirements of EU Regulation (EC) No. 915/2023 regarding contaminants.
Patesa Forest Fruit is supplied in 20 kg polypropylene (PP) buckets. It should be stored in its original unopened packaging in a cool, dry place away from direct sunlight at temperatures between 5°C and 25°C. After opening, the product should be kept refrigerated at 0–8°C and the container properly closed after each use.
