The Lime Paste (Art. No. 873141) produced by Expertarom Food Ingredients S.R.L., Sibiu, Romania, is a concentrated flavouring ingredient developed for use in the food industry, particularly in ice cream and confectionery applications. It is intended to be incorporated into food formulations rather than consumed directly. The recommended dosage is approximately 50 g per 1 kg of mix, providing a distinctive lime flavour and colour in the final product.
The paste is made from sugar, water, glucose syrup, and lime juice from concentrate, with a fruit content of 13%. Additional ingredients include citric acid, modified starch, sodium citrate, natural colouring extracts from safflower, colours curcumin and copper complexes of chlorophyllins, potassium sorbate as a preservative, and flavourings. At 20°C, the product appears as a viscous, homogeneous green paste with a typical lime aroma and taste.
Physico-chemical characteristics include a Brix value of approximately 64°Bx (±3) and a pH of 2.9 (±0.5). Nutritionally, the product provides 998.1 kJ / 234.5 kcal per 100 g, with less than 0.1 g of fat, 54.2 g of carbohydrates (of which 47.2 g are sugars), 0.09 g of fibre, less than 0.1 g of protein, and 1.24 g of salt.
The product meets microbiological standards with limits of max. 1000 cfu/g total germ count, 1 cfu/g Enterobacteria, and 100 cfu/g yeasts and moulds, and complies with EU Regulation (EC) No. 2023/915 regarding contaminants.
The lime paste is supplied in food-grade polypropylene sealed buckets. It should be stored in a cool, dry place away from direct sunlight at 5–25°C, and once opened, kept refrigerated at 0–8°C with the container properly closed after each use. Under these recommended conditions, the product has a shelf life of 24 months from the production date. It is GMO-free, not treated with ionising radiation, and the packaging materials comply with relevant EU food-contact regulations.
